Marinated Ikura Uni Tofu Salad

Step 1
Prepare the dashi sauce, combine the kombu, water and bonito flake. Bring it to boil and cook for about an hour, let cool and set aside

Step 2
In a bowl, add the salmon roe and combine with the sake and soy sauce

Step 3
Let set in the fridge for an hour

Step 4
Slice the tofu into pieces

Step 5
spoon the marinade uni on top of the tofu, and add the salmon roe

Step 6
Add bonito flakes on top, and sprinkle the arugula around the tofu

Step 7
In a bowl, pour the dashi juice and add olive oil, salt and pepper to make a dressing

drizzle around the tofu
