Mapo Eggplant

Mapo Tofu may be your comfort food cooked by your mum. Let’s replace tofu with eggplants this time!

Step by Step Instructions

Step 1
Cut the eggplant into pieces and soak in salt water for 30 minutes. Set aside.

Step 2
Marinate the minced pork with salt, Chinese cooking wine and ground white pepper for 15 minutes.

Step 3
In a pan, add some oil on medium heat. Add the eggplant and sear until soft. Set aside.

Step 4
In the same pan, add some oil on medium heat. Add garlic, ginger and sauté until fragrant.

Step 5
Add minced pork and stir-fry until cooked. Add chili bean paste and combine well.

Step 6
Add light soy sauce, water, sugar and mix well. Add eggplant and combine well.

Step 7
Add sesame oil and mix well. Ready to serve.
