Mantis Shrimp with Fermented Soybean

Step 1
Chop the garlic and soak in water for 5 minutes. Drain and set aside.

Step 2
Rinse the mantis shrimps and remove the legs. Cut along a side with scissors.

Step 3
Heat some oil in a pot. When the oil is 60% heat (about 160℃), add chopped garlic and deep-fry until golden brown. Transfer to kitchen towel to remove excess oil.

Step 4
When the oil is heater, add mantis shrimps and deep-fry until crispy. Remove from oil and put them back to deep-fry again.

Step 5
Remove all the oil. Heat the pot with some oil, add fermented soybean and sauté until fragrant. Add mantis shrimps, light soy sauce, dark soy sauce, salt and sugar. Stir well and ready to serve.
