Mango Sticky Rice with Coconut Sauce

Mango sticky rice is a dessert which must be select after meal. Slightly change the shape to a mango sushi rice, it can be more enjoyed directly by hand.

Step 1
Soak the glutinous rice for 2-3 hours. Drain and set aside

Step 2
Cut the side of the mango and discard the seed. Scoop the mango flesh off the skin and cut it into bias about 2-3cm in width

Step 3
Combine the coconut milk and raw sugar in a saucepan. Bring it to boil and cook until the sugar has dissolve

Step 4
Add a pinch of salt. Transfer to a dipping dish

Step 5
Add the rice in the rice cooker, add enough water to cover the rice and cook until the rice is cooked

Step 6
Add the coconut milk and sugar with the rice and mix together. Make sure the rice is coat with the coconut milk. Cover the lid and let it sit for another 20-30 minutes, so the rice can absorb the coco

Form the rice into a sushi size and use the finger to firm the rice

Step 8
Place the slice mango over the rice and serve with the coconut sauce
