Mango Fruit Tart

Step by Step Instructions

Step 1
Preheat the oven to 180 ℃.

Step 2
Soak gelatine in ice water.

Step 3
Mix butter and sugar, add in eggs, then add in flour, mix well.

Step 4
Flatten the dough into a zipper bag, and refrigerate for 30 minutes.

Step 5
Evenly knead refrigerated dough, roll into 2cm thick.

Step 6
Pinch the dough with tart molds

Step 7
Put the rice on the dough.

Step 8
Put the dough into the oven roast till there is colour on it. Pour away the rice and grill until golden, take the tarts away from the oven and cool them down.

Step 9
Peel the mangos and take away the seed, blend it with 100ml water.

Step 10
Slightly boil half of the mango juice. Add in soaked gelatine, sugar, stir until gelatine and sugar are completely melted.

Step 11
Add vanilla into the other half of mango juice, mix well.

Step 12
Melted white chocolate on top of the boil water.

Step 13
Evenly coat the chocolate inside cooled tarts, wait until chocolate condensed, pour in the prepared sauce, refrigerate until sauce condensated.

Peel a mango, take away the seed and dice it. Cut blueberries in half.

Step 15
Mix diced mango with blueberries, put it on the tarts, place mint leaves on top of it, serve.
