This vegetarian maitake mushroom soup is very healthy since meat is replaced by cashews.

Step 1
Soak and rinse the cordyceps flower and cashews. Peel and cut the carrot into pieces. Cut the corn into pieces. Soak and rinse and dried maitake mushrooms. Remove their stems.

Step 2
In a pot, add carrot, corn, cordyceps flower, maitake mushrooms, cashews and water. Bring to boil on medium heat.

Step 3
Reduce to medium low heat. Cover the lid and cook for 1 hour.

Step 4
Season with some salt and ready to serve.
