Lotus Longanae Gingko Sweet Soup

Step 1
Soak the bean curd sheet until soft, drain and set aside

Step 2
Remove the shell from the gingko

Step 3
In the pot, add the first 5 Chinese herbs ingredients in water and cook for 20 minutes

Step 4
Discard the herbs and save the liquid

Step 5
Add the gingko and lotus seeds in the pot with herbal liquid, then add 700mL water

Step 6
Bring it to boil and lower the heat, add sugar and cook for an hour

Step 7
Add the bean curd sheet, red dates and the dried longanae. Cook for another 20 minutes

Step 8
Gentle stir in the egg, turn off the heat and cover the lid. Let it sit for 10 minutes
