Loire Valley hen with white wine and morel sauce

Step by Step Instructions

Step 1
Soak the morel into water for 30 min. Drain and set aside.

Step 2
Brush 20g melted butter on the French Hen. Season it with salt and pepper. Preheat the oven to 220 °C. Bake it for 35 min.

Step 3
Remove the Hen from oven. Deglaze Hen oil and mix with white wine. Make the sauce thick by adding cream. Season with salt and pepper.

Step 4
Pan fry morel in a pan with 20g butter. Season it with salt and pepper. Cook for 4 min in high heat.

Step 5
Cut the hen into half, garnish with morel and white wine sauce. Serve immediately.
