Lobster Mango Salad in Belgian Endive Bowl

Use Belgian endive as a bowl to hold the salad. Doesn’t it look like the lotus floating on the pond? They are just too beautiful to eat!

Step by Step Instructions

Step 1
In a pot, bring the water to boil and cook the lobster for 10 minutes or until it fully cooked

Step 2
Transfer to the cold water to let cool. Remove the meat and cut into pieces.

Step 3
Wash and rinse the endive. Separate the leaves and set aside

Step 4
Peel and cut the mango in cubes. Finely dice the red onion

Step 5
In a bowl, whisk together the mayonnaise, plain yogurt, sweet chili sauce, lemon juice, honey, salt and black pepper

Step 6
In a bowl, mix together the lobster meat, mango, red onion, chives and the dressing

Step 7
Place the salad in the endive bowl, sprinkle with chives and ready to serve
