Step by Step Instructions

Step 1
Soak the gelatin sheet in water until soft

Step 2
Prepare the crust. Mix together the butter and sugar

Add the egg and mix together

Add the cake flour

Place the dough in the plastic bag and refrigerate for 30 minutes

Roll the dough into 2cm thick

Step 7
Place the dough in the tart pan, trim off the edge

Use a fork to pierce the crust

Bake the crust until golden brown about 10-15 minutes. Let cool and set aside

Zest the lemon and juiced

In a saucepan, bring the lemon juice to simmer, add the sugar, gelatin, egg yolk, egg white. Whisk until thicken then remove from the heat

Add the lemon zest and vanilla extract to mix well

Add the butter and whisk until the butter is melted

Melt the white chocolate in a double broiler

Step 15
Brush it over the crust until the chocolate is set

Pour in the lemon curd and place in the fridge until the lemon curd is set. Garnish with mint leaves and ready to serve
