Lemon Strawberry Tart

Step 1
For curd, whisk eggs, sugar, and lemon juice in a saucepan to mix. Add butter and lemon peel

Stir over medium heat until curd thickens about 8 minutes

Transfer to small bowl. Press plastic wrap onto surface of curd and chill at least 2 hours

Step 4
For crust, combine flour, sugar, and salt in a mixer. Add butter, cream and yolk

blend until mixture and mix until the dough is smooth

Gather dough into ball; flatten into disk and wrap with plastic. Place in the fridge and chill for 1 hour

Roll out dough on lightly floured surface about 1” wider than the diameter of the pan

Transfer dough to the tart pan. Trim the overhang of the dough

Pierce crust all over with fork or knife

Step 10
Preheat oven 200C. Bake crust until golden, pressing with back of fork if crust bubbles, about 20 minutes. Cool crust completely on rack

Strain jam into saucepan; warm briefly to thin

Release tart from pan, and spread curd in crust
