Step by Step Instructions

Step 1
Preheat the oven to 180°C.

Step 2
Prepare the crust. Beat together the butter and sugar. Slowly add the egg and beat until combine.

Step 3
Add the cake flour and knead into dough. Wrap it with plastic and refrigerate for 20 minutes.

Step 4
Place the dough on the surface area, dust some flour and roll it into the 5-8mm thick and place in the tart mold.

Step 5
Prepare the lemon filling. Slightly cut the vanilla bean and scrap out the vanilla seeds. In a pot, add whipping cream and vanilla seed and bring it to simmer.

Step 6
Combine the eggs and sugar. Add lemon juice and the cream mixture. Whisk together.

Step 7
Pour the lemon filling in the tart shell and bake it for 15 minutes until the crust is cooked and golden brown. The lemon filling is set and let cool.

Step 8
Prepare the topping. Beat half of the powder sugar and the egg white fluffy, then add the other half of the powder sugar and beat until stiff peak.

Step 9
Place the egg white in the piping bag with the star tips. Pipe it over the lemon tart.

Step 10
Use the torch to burn until the egg white is golden brown. Ready to serve.
