Step 1
Peel and cut the onion into small pieces

Step 2
Cut the red pepper into small pieces

Cut the tomato into small pieces

Step 4
Mince the garlic and chop the parsley

Step 5
In a pan, add some oil on a medium heat. Sauté the garlic and onion until the onion slightly translucent

Add the tomatoes and red pepper, let it simmer until the tomatoes are soft

Add basil, parsley and cook for another 15-20 minutes until the sauce has thicken. Season with salt and pepper. Set aside

Cut the eggplant, zucchini, yellow squash 1/2 cm in round slice

Step 9
In a pan, add some oil and sear the eggplant, zucchini and yellow squash until both side are slightly golden brown

Add the thyme and mix well. Set aside

Add some tomato sauce in the pan

Step 12
Assemble the vegetable over the sauce

Preheat the oven to 180°C and bake it for 10 minutes

Add the thyme for garnish and serve
