Step 1
Marinate the lamb shanks with salt, black pepper, Italian seasoning and olive oil overnight.

Step 2
Cut the celery, carrot, onion and tomatoes into pieces. Set aside.

Step 3
In the Lagostina Pressure Cooker (9L), add some oil on a medium heat. Add the lamb shanks and sear until golden brown. Transfer to a plate and set aside.

Step 4
Add celery, carrot, onion and sauté until fragrant.

Step 5
Add the minced garlic and sauté until fragrant.

Step 6
Add lamb shanks, white wine, chicken broth and 2/3 tomatoes. Stir well.

Step 7
Close the lid.

Step 8
Turn the operating valve to the high pressure position.

Step 9
Cook on medium heat until the pressure indicator rises and the valve starts to hiss.

Step 10
Reduce to low heat and cook for 30 minutes.

Step 11
Release the steam. Remove the lid.

Step 12
Add butter, remaining tomatoes, salt and pepper. Cook for 2 minutes and transfer to a plate.

Step 13
Sprinkle with chopped parsley.
