Korean Pickled Daikon

Watching Korean TV series, they always have different kind of kimchi on the table. There are varieties of kimchi. Besides the common pickled cabbage, pickled daikon also a very common choice. Let’s get some daikon at winter time and pickled them. This is really simple and only takes 1-2 days then you can try those delicious pickled daikon.

Step 1
Clean and cut the daikon into cubes.

Step 2
Peel and mince the ginger. Mince the garlic and chop the green onion.

Step 3
In a bowl, add the daikon, salt and marinate for 30 minutes. Stir every 10 minutes.

Step 4
Drain off the liquid from the daikon. Add the minced ginger, garlic, green onion, sugar, fish sauce, Korean chili powder and mix well. Use hand and slightly squeeze together the daikon and the seasoning.

Step 5
Place it in the air tight container, cover the lid and refrigerated overnight. Ready to serve.
