Step 1
Dice the potato. Slice the carrot and cucumber. Mince the red onion and ginger

In a pot, heat some oil. Saute the sweet soybean paste until fragrant. Set aside

Dice the pork belly. Heat the pan and saute the pork belly until grease released. Add minced ginger and red onion. Then add the diced potato and stir well

Step 4
Season with sugar, sweet soybean paste and light soy sauce

Step 5
Cook the noodles and place in a bowl. Spread the sauce on top and garnish with carrot and cucumber. Ready to serve
