Korean Beef Sushi

We used to wrap different kinds of vegetables in Korean sushi. Healthy and delicious!

Step by Step Instructions

Step 1
Julienne the pickled daikon, cucumber and carrot. Stir-fry the carrot until cooked and set aside.Beat the eggs. In a pan, add some oil on medium heat. Add egg wash and sear until cooked on medium low heat. Let cool and julienne.

Step 2
Season the cooked rice with salt and sesame oil. Set aside.

Step 3
Marinate the minced beef with sugar, light soy sauce, Japanese cooking wine, Korean sesame oil for 30 minutes.

Step 4
In a pan, add some oil on medium heat. Add beef and sauté until cooked. Transfer to a plate and set aside.

Step 5
Prepare a bamboo sheet, layer the nori sheet (shinny side down), spread the rice on about 2/3 of the nori and leave 1/3 on top.

Step 6
Place minced beef, carrot, pickled daikon, cucumber, pickled burdock and egg on the rice.

Step 7
Roll the bamboo sheet from the bottom. Repeat this step 4 times.

Step 8
Brush the surface of the sushi roll with Korean sesame oil. Slice and ready to serve.
