Kimchi Pork Bone Soup (Gamjatang)

Step 1
Skin and chop the potatoes into pieces. Remove the roots of the enoki mushrooms. Chop the leek into sections. Set aside.

Step 2
Bring a pot of water to boil. Add pork bone, half of the garlic, ginger and leek. Blanch for 3 minutes.

Step 3
Place the pork bone, leek, ginger, garlic and Korean chili sauce in a pot.

Step 4
Add potatoes, kimchi and Korean soybean paste. Add water to cover the ingredients. Cover with lid and cook for 1 hour on medium low heat.

Step 5
Add enoki mushrooms, crown daisy and perilla leaves. Cook for 2 minutes and ready to serve.
