Peel and cut the potato, onion and carrot into pieces

Slice the ginger

Cut the konyaku in pieces

Slice the pork belly into 2 cm thick

Heat up a pot over medium heat and add some oil. Sauté the ginger until fragrant

Add the pork belly and cook until golden brown

Add the onion, potato and carrot, quick stir

Add the water, light soy sauce, mirin, sugar, sake and hondashi

Cover the lid and cook for 20-30 minutes until the potato and carrot are tender

Add the konyaku and cook for another 30 minutes

Turn off the heat and let it sit for another 20 minutes
