Sushi is the iconic Japanese dish. Apart from sushi rice, you may wrap soba noodle instead! The refreshing flavor is perfect for this summer!

Step 1
Slice the Japanese cucumber and takuwan. Cut the imitation crab meat in halves.

Step 2
In a pot, bring the water to boil and cook the soba noodle until soft.

Step 3
Transfer to cold water to let cool, drain and set aside.

Step 4
Lay the nori on the bamboo sheet, place the soba noodle in the middle.

Step 5
Add the imitation crab meat, cucumber and takuwan.

Step 6
Roll up the bamboo sheet and form into a roll.

Step 7
Cut the roll in pieces and ready to serve.
