Japanese Eel and Egg Pot

Step 1
Julienne the onion and green onion. Cut the eel into pieces.

Step 2
In a pan, add some oil on medium heat. Add onion and sauté until fragrant.

Step 3
Add bonito stock, Japanese soy sauce, Japanese cooking wine, mirin and light brown sugar. Place eel on top and bring to boil.

Step 4
Add the slightly beaten eggs. Cook on a medium low heat until the egg is set.

Step 5
Sprinkle with green onion and ready to serve.
