Imitation Shark's Fin Soup

A traditional Hong Kong style soup, also known as wun tsai chi.

Step by Step Instructions

Step 1
Cook and shred the chicken breast. Soak and slice the dried mushrooms. Soak and julienne the black fungus. Beat the egg, chop the green onion and dissolve the water chestnut flour in 50 mL water. Set aside.

Step 2
Mix the fish paste, green onion, Chinese cooking wine, sesame oil, corn starch, salt and ground white pepper in one direction until sticky.

Step 3
Bring a pot of water to boil. Spoon the fish paste into water and cook until floated. Transfer to a plate and set aside.

Step 4
Bring the chicken broth and water to boil on medium heat.

Step 5
Add dried mushrooms, black fungus and bring to boil. Cover with lid, reduce to medium low heat and cook for 8 minutes.

Step 6
Add vegetarian shark’s fin, chicken breast, fish paste, dark soy sauce, light soy sauce, oyster sauce and mix well. Add water chestnut flour water and mix well.

Step 7
Remove from heat, add sesame oil and mix well. Add egg wash and gently stir. Ready to serve.
