Homemade Pineapple Tart

Step by Step Instructions

Step 1
Remove skin of winter melon and pineapple and cut into small cubes

Step 2
Blend winter melon and using a cheese cloth or soup bag, remove excess water from the winter melon

Step 3
dried blended winter melon

Step 4
Blend pineapple and reserve for later use

Step 5
In a medium heat pan, cook blended pineapple, sugar, winter melon and molasses. Reduce to low heat when liquid comes to a boil

Step 6
Continue to cook for about 10-15 minutes until filling turn golden brown and very sticky. Let cool and reserve for later use

Step 7
Pre-heat oven at 175C . To make the pastry, in a mixing bowl, combine all pastry ingredients and mix well into a dough like consistency.

If dough is too wet and sticky, refrigerate for 15-30 minutes before next step

Step 9
Divide dough and roll into a small ball and press flat

Step 10
Place 1-2 teaspoon of filling in the center of the pastry, Cover filling with the outer part of the pastry and roll into a ball

Step 11
Place dough ball into a cookie cutter of your choice and press to fill the entire cookie cutter

Step 12
Repeat step 7-10 and place cookie with cutter on a sheet pan. Bake cookies with cutter at 175C oven for about 10-15 minutes until cookie is golden brown.
