Hiroshima Oyster and Vegetable Stew with Miso

Step 1
Cut the Chinese cabbage and leek into sections. Slice the tofu and set aside.

Step 2
Clean the oysters with some corn starch and rinse under water until the water is clear. Drain and set aside.

Step 3
Spread the miso around the pot.

Step 4
Layer Chinese cabbage, leek, shimeji mushrooms, tofu and oysters in the pot.

Step 5
Add water, bonito powder, mirin, sake and sugar. Bring to boil on medium heat.

Step 6
Cover the lid and cook for 3-5 minutes on medium low heat. Ready to serve.
