Hericium Burdock and Pork Soup

Cook this Chinese soup with burdock and hericium! Adding corn and figs give a sweeter taste to the soup.

Step 1
Peel and slice the burdock. Soak and remove the stems of hericiums and white fungus. Cut the corn into sections. Soak and rinse the figs and honey dates. Set aside.

Step 2
Bring a pot of water to boil. Add lean pork and blanch for 3 minutes. Drain and set aside.

Step 3
Cook the hericiums, pork, burdock, corn, dried figs, honey dates and some water for 15 minutes on medium heat. Cover the lid and cook for 1 hour.

Step 4
Add white fungus and cook for 30 minutes.

Step 5
Season with some salt and ready to serve.
