Today we share another simple, yet healthy Chinese “light soup.” Water crest is a fast growing plant and one of the oldest known leaf vegetables among Chinese cuisines. There is much nutrition in watercress. It contains significant amounts of iron, calcium, iodine, and folic acid, in addition to vitamins A and C. Many benefits from eating watercress are claimed including as a source of antioxidants and a digestive aid. It is widely believed to help defend against lung cancer.
