Healthy Pumpkin Pancakes

Step by Step Instructions

Step 1
Cut the pumpkin in half, remove the seeds and steam ½ of the pumpkin until soften. Let cool

Step 2
Cut the other ½ in thin slice

Step 3
Whisk flour, sugar, baking powder, spices and salt in a bowl

Step 4
In a separate bowl whisk together then pumpkin flesh, milk, melted butter, and egg

Step 5
In a skillet, add a few slices of pumpkin to pan fry until nice and golden

Step 6
Ladle the batter

Step 7
Cook the pancake about 1-2 minute on each side until golden brown

Step 8
Serve hot with butter and maple syrup
