Hand-Shredded Eggplant in Mashed Garlic

Eggplant is able to remove the heat inside your body, therefore it is good to have in summer. However, cooking under high heat or frying cause loss of its own nutrients. You may have a try of cold-mixing with mashed garlic which keeps nutrients at the same time delicious.

Step 1
Clean the eggplant, cut it to pieces and put in the pot to steam for 15 minutes. Take out for further use.Mash the garlic, chopped green onion, cut red chili to rings and coriander to pieces.

Step 2
Mix well soy sauce, sesame oil, vinegar, sugar, salt, mashed garlic, red chili rings and chopped green onion. Make sure sugar and salt totally dissolve and become sauce.

Step 3
Shred the eggplant by hands and put them on plate. Pour on the made sauce and garnish with coriander.
