Step 1
In a pot, bring the water to boil and blanch the smoked ham hock and smoked pork feet and cook about 2-3 minutes, discard the water

Step 2
Add water back to the pot and place the ham hock and pork feet back in the pot and cook for about an hour

Soak the split pea overnight

Step 4
dice the carrot, onion and celery

Step 5
In the stock pot, add the butter and sauté the carrot

Step 6
then add the onion, celery, garlic, thyme, bay leaf

Step 7
Drain the water off the split peas, when the onion is soften, add the split peas in the pot and cook for about 10 minutes

Then add the ham stock, enough to cover the peas. Bring the stock to boil

Cover with the lid and cook for another 45 minutes to an hour until the peas is soften

Step 10
Remove and discard the bay leaf and the thyme stem

Step 11
season with salt and pepper

Ready to serve
