Grilled Portobello Mushrooms with Pesto, Tomatoes and Feta Cheese

Step by Step Instructions

Step 1
Clean the Portobello mushrooms with a damp paper towel and remove the stems and black gills under the mushroom caps.

Step 2
Brush some olive oil onto the back side of the Portobello mushroom. Season with a bit of salt and black pepper..

Step 3
Stir together the pesto sauce and 2 tbsp of olive oil.

Step 4
Turn the mushrooms around and spoon in pesto mixture into each mushroom cap and spread evenly.

Step 5
Mix minced garlic, diced tomatoes, chopped parsley and feta cheese together in a bowl. Season with a bit of salt, sugar and black pepper. Spoon the mixture into the mushroom cap.

Step 6
Grill the mushrooms over medium heat for 8-10 minutes or until soft. Cover with foil during the last 2 minutes.

Step 7
Serve hot with drizzle of balsamic glaze on top.
