Step 1
Marinate the pork with 1/2 Japanese soy sauce, mirin, cooking wine and sugar for 5 minutes.

Step 2
In a pan, add some oil on a medium heat. Add onion and carrot. Sauté until softened.

Step 3
Add pork, minced ginger, the remaining Japanese soy sauce, mirin, cooking wine and sugar. Cook until the pork is done.

Step 4
Form the sushi rice into 2 balls. Press and place on 2 sides of the nori sheet.

Step 5
Place lettuce and pork on one side. Flip another side over and form into rice ball.

Step 6
Prepare the Fruit Skewer: Skew the kiwi, pitaya, pineapple, grape and strawberry accordingly. Ready to serve.
