Grilled Curry Fish Ball, Squid and Pork Rind

We always have the well-known curry snacks, especially for Hong Kong people: Curry fish balls, pork rind and squid. Using the way of BBQ to make it dry becomes another unique while new flavor.

Step by Step Instructions

Step 1
Rinse the pig skin, water squid and cut into pieces.

Step 2
Finely chop the onion, shallot and garlic.

Step 3
In a pot, add some oil on a medium high heat. Sauté the onion, shallot and garlic until fragrant.

Step 4
Add the curry paste, peanut butter, XO sauce, coconut milk, oyster sauce, sugar, light soy sauce, water and mix well.

Step 5
Bring the sauce to simmer, cook for 15 minutes and turn off the heat.Place the fried pig skin, water squid and fish ball in the curry and marinate overnight.

Step 6
Preheat the grill over medium high heat.Skewer the fish ball, pig skin and water squid respectively.

Step 7
Place the skewer over the grill and rotate the skewer until golden brown and fully cooked.

Step 8
Ready to serve.
