Green Curry and Chicken Fried Rice

This green curry fried rice is exceptionally appetizing! Lightly spicy with the fragrance of coconut milk.

Step by Step Instructions

Step 1
Dice the chicken tenderloins and red onion. Halve the straw mushrooms and slice the cucumber. Beat the egg and set aside.

Step 2
Marinate the chicken tenderloins with light soy sauce, sugar, sesame oil and rice wine for 15 minutes.

Step 3
In a pan, add some oil on medium heat. Add red onions and sauté until fragrant. Add green curry paste and coconut milk. Stir-fry until fragrant.

Step 4
Add chicken and stir-fry until cooked. Add straw mushrooms and mix well.

Step 5
Add rice and stir-fry until the rice is separated. Add egg wash and mix well.

Step 6
Season with brown sugar and fish sauce. Add Thai basil and mix well.

Step 7
Place the fried rice and sliced cucumber into a lunchbox. Ready to serve.
