Step 1
1. Chop the herb, green and red chili peppers. Chop the onions.

Step 2
Peel the pumpkin and cut into thin slices.Squeeze lemon juice and set aside

Step 3
In a bowl, beat the eggs

Step 4
add some pepper, salt, cornstarch, cumin, ginger powder, corn kennels, and green pepper, onions, herbs, add some lemon juice and mix well. Add a tablespoon of coconut milk.

Mix again.

Heat up some oil in a saute pan on high heat, add 3 pieces of pumpkin, then add 3 spoonful of the corn mixture.

Pan fry until golden, about 2-3 minutes. Flip over and pan fry the other side until golden also.
