Step 1
Peel and dice the carrot, lotus root and burdock. Soak the dried shiitake mushrooms and Koya tofu until soft and dice.

Step 2
Bring the water, kombu soy sauce, mirin and sugar to boil on medium heat.

Step 3
Add the carrot, lotus root, dried shiitake mushrooms, Koya tofu and cook until the sauce reduced half. Drain and let cool.

Step 4
Mix together with sushi rice.

Step 5
Stuff the aburaage with sushi rice. Ready to serve.
