Step by Step Instructions

Step 1
Mash the shrimp. Peel and dice the water chestnut. Set aside.

Step 2
In a bowl, mix together the shrimp paste, water chestnut, squid paste, chopped green onion, minced garlic, Taiwanese rice wine, sesame oil, salt, sugar and white pepper. Add 15g corn starch and mix well.

Step 3
Soak the rice paper in water until soft. Place on a cutting board. Add the shrimp mixture and wrap it up. Coat with the remaining corn starch.

Step 4
In a pan, add enough oil for deep-fry. Add the shrimp roll. Deep fry under medium high heat until slightly golden brown and take it out. Add again when the oil temperature rises and deep fry until golden brown.

Step 5
Toss together the sweet chili bean sauce, tomato paste, sweet chili sauce, minced garlic and sugar. Sprinkle with chopped green onion. Serve with the shrimp roll.
