Step 1
Julienne the cabbage and carrot, slice the mushrooms and cut the eel into pieces. Set aside.

Step 2
In a pan, add some oil on a medium heat. Slightly fry the cabbage, carrot, white shimeji mushrooms, shiitake mushrooms and salt.

Step 3
Add udon and stir fry until softened. Add eel sauce, eel and stir well.

Step 4
Transfer to a plate and sprinkle with bonito flakes. Ready to serve.
