Fried Tofu with Sole Fillet on Rice

Cut the fish into medium size

marinade for 15 minutes

Cut the tofu in pieces

cut the green onion into 1/2” length

Soak the mushroom until soft and sliced

Dredge the fish with flour

In the pot, heat the oil to 180C and deep fried until golden brown

lay on the kitchen paper to soak up the grease, set aside

Same with the tofu, dredge the tofu with flour and deep fried until golden brown

transfer to the kitchen paper and set aside

In the pan, add the oil on the medium high heat and sauté the garlic, ginger and mushroom until fragrant

add the Chinese cooking wine to deglaze, bring the sauce to boil and add the corn starch water to thicken the sauce

Add the fish and tofu back to the pan, slowly combine with the sauce mixture
