Fantail Shrimps are a famous dish in Jiangsu. White shrimp bodies with their red fantails give good color combination, plus green beans to further decorate, making it attractive even before the first bite. The main ingredients are river shrimps, egg whites and peas, which are helpful to blood making, anti-aging as well as improving immune system.

Step 1
Clean the shrimps and remove their black strings, heads and shells

Step 2
Rinse them again, then marinate with black pepper, salt and cooking wine for 20 minutes

Step 3
Beat the eggs then add some cooking wine and white vinegar in.Wrap the marinated shrimps with cornstarch. Put them into eggs and breadcrumbs.

Step 4
Heat the pan with oil. When the oil is 80% heated, put the shrimps in until all turns to golden-yellow. Take them out and remove oil on surface.
