Step 1
Clean the eggplant and shred it. Cut red chili to rings, ginger to shreds. Mash garlic and green onion.

Step 2
Soak shredded eggplant in salt water.

Step 3
Clean minced pork and mix it with salt, soy sauce, cooking wine and cornstarch.

Step 4
Heat the pan with oil. First put in ginger and garlic, then put in minced pork until color turns lighter.

Step 5
Put in eggplant and stir-fry until it is softened. Add dark soy sauce and red chili rings. Stir-fry until all mixed.

Step 6
Add salt, sugar and stir well. Turn to high heat to reduce water. Serve on plate and garnish with mashed green onion.
