Step 1
In a large mixing bowl, combine the warm water with the flour and mix until all the water are absorb

then add the cold water and knead together until the dough is smooth. Rest the dough for 30 minutes and cover with plastic wrap in room temperature

In a pan, add oil and scramble the egg and set aside

In the same pan, add oil and sauté the dry shrimp until fragrant, transfer to the plate

Clean the Chinese chives and cut into pieces, then mix it with the egg and shrimp together in a mixing bowl and add salt to taste

After resting the dough, divided it into 6-8 pieced

Roll it about 1cm thick with the rolling pin

then add the stuffing inside

fold it to form a dumpling

In a pan, add oil on a medium heat

pan fried until both sides are golden brown
