Fried Bean String with Beef

This is a common south China dish. It also got a funny and layman name “Hit the cow” probably because pieces of straight long bean strings are like rods for hitting. Bean strings are fresh enough to balance beef taste. And more delicious with garlic added.

Step by Step Instructions

Step 1
Clean bean strings and cut their heads and tails. Cut beef to slices. Mash garlic and cut red chili to rings.

Step 2
Marinate sliced beef with cooking wine, soy sauce and black pepper for 5 minutes.

Step 3
Heat a pot of water. Add some oil and salt. Then put bean strings in and blanch.

Step 4
Heat the pan with oil, Put sliced beef in until both sides are cooked and colored. Take out for further use.

Step 5
Heat the pan with oil. Put mashed garlic and pan-fry until fragrant. Put bean strings in and pan-fry until they become fresh green. Add water and cover the pan for 3 minutes.

Step 6
Add beef, salt and sugar. Stir well.
