Fresh Shrimp Roe Noodle

In the past, people ate shrimp roe noodle in Summer. The cooked shrimps in the noodle turn red, while the red color symbolizes good luck. In Mandarin, shrimp and summer have the same pronunciation so this represents the blessing of Summer. With the use of Hong Kong style shrimp roe noodle and shrimp stock, this dish is creative and tasty.

Step by Step Instructions

Step 1
Remove the head, shell and black strings of the cleaned shrimps. Keep refrigerated.

Step 2
Smash the lemongrass and tie a not.

Step 3
Boil 3000ml water. Add shrimp heads, lemongrass and bay leaves. Simmer under medium heat for 3 hours or until 1/3 of shrimp stock is left. Filter the shrimp stock through a sieve

Step 4
Cook the egg in a pot of boiling water for 6 minutes. Cool down and set aside.

Step 5
Pour the broth into the pot. Add fish tofu, 18 shrimps and noodle. Season with salt when boil. Remove from heat and transfer to a bowl.

Step 6
Add the washed soy bean, Chinese chives and bay leaves. Remove the egg shell and cut the egg into halves. Add the egg into the bowl.

Step 7
Sprinkle roasted peanut and fried shallot. Add sesame oil. Ready to serve.
