Fresh Lemon and Olive Oil Cake

Step by Step Instructions

Step 1
Preheat the oven to 180°C. Spray the cake mold with butter, cover with parchment paper and set aside.

Step 2
Whisk together sugar and eggs until pale and thick.

Step 3
Add milk, oil, lemon juice and zest. Whisk until combined.

Step 4
Sift flour and baking powder together in another bowl. Add egg mixture into the flour mixture and mix well.

Step 5
Divide batter into mini cake molds. Bake until golden brown and cooked through, about 50 minutes. Let cook in the molds. Turn out the cakes and place on cooling rack. Dust with icing sugar and ready to serve.
