Flourless Chocolate Cake

This cake is using meringue technique. It has the melted in mouth texture and similar to chiffon cake. This iseasy to learn and also a healthy delicious dessert without any additives.

Step by Step Instructions

Step 1
Preheat the oven to 170°C. Place the parchment paper in the 8” cakemold.

Step 2
In a bowl, add the chocolate, butter, cocoa powder, sugar and coffee liqueur. Place in a double boiler until it melts. Gradually add the whipping cream and mix well. Add the egg yolks and whisk to combine.

Step 3
Combine the egg whites, lemon juice, salt and whisk well. Add the sugar 3 times and whisk until stiff peak. Gradually add the meringue in the chocolate mixture and mix well.

Step 4
Pour the batter in the cake mold and slightly tap on the surface area to release bubble. Place in the oven and bake it for 50 minutes, let cool and ready to serve.
