In the stock pot, fill up will water (make sure it can cover the chicken) and add the salt and brown sugar

place the chicken in the brine and let it sit for overnight

Rough chopped the potato, onion, celery and carrot and toss it with oil, salt and pepper and lay on the baking sheet pan

Take the chicken off the brine and drain, use a scissor cut the bone from the back of the chicken

Press on the bone so the chicken will lay flat while cooking

In a mixing bowl, mix all the rub ingredients together

rub the mixture on the chicken, and then place the chicken on the vegetable

Preheat the oven to 180C, cook the chicken for 45 minutes to an hour until the chicken is fully cooked
