Eggplant Lasagna
Recipe Details
If you find the ordinary lasagna too common, try replacing the pasta with eggplant. The texture is more special with higher nutritional value.

Step by Step Instructions

Step 1
Preheat an oven to 200°C.

Step 2
Slice the eggplant lengthwise, dice the onion, mince the garlic and chop the basil. Set aside.

Step 3
In a pan, add some oil on medium heat. Add garlic, onion and sauté until fragrant.

Step 4
Add tomato pasta sauce and bring to boil. Add basil and mix well. Remove from heat and set aside.

Step 5
Coat the eggplants with all-purpose flour. In a pan, add some oil on medium heat. Add eggplants and sear until golden brown on both sides. Transfer to a plate.

Step 6
In a baking tray, layer tomato sauce, eggplants and mozzarella cheese accordingly. Repeat and layer tomato sauce once more at last.

Step 7
Sprinkle with parmesan cheese and bread crumbs.

Step 8
Bake for 10 minutes or until golden brown. Ready to serve.
