Eggplant Fish Cake and Tofu Stew

This eggplant stew is seasoned with spicy bean paste. Together with seared fish cake, the tofu absorbs the sauce fully. An ideal dish to go with rice.

Step 1
Cut the eggplant and tofu into pieces, soak in salted water for 30 minutes and set aside.

Step 2
Mix together fish paste, green onion, sesame oil, 1 tsp sugar, corn starch, salt and white pepper in one direction.

Step 3
Mix together chili bean paste, sugar, dark soy sauce, hot water and set aside.

Step 4
In a pan, add some oil on medium heat. Add fish paste, flatten and sear until cooked. Let cool and cut into strips.

Step 5
In the same pan, add some oil. Add garlic and sauté until fragrant. Add eggplants and sear until soft.

Step 6
Add fish cakes, tofu, sauce and mix well. Cook for 2-3 minutes and ready to serve.
