Preheat an oven to 100°C. Use the hand blender to whisk the egg white and lemon juice at medium speed until fluffy.

Step 2
Fold in powdered sugar by 3-4 times. Use the hand blender at high speed to whisk until firm.

Step 3
Scoop egg white into 2 separate mounds. Add cocoa powder into one, and add matcha powder into another one.

Step 4
Place the parchment paper on a baking tray, squeeze your favourite shape with spoon or piping bag.

Step 5
Bake for 80 minutes until the biscuit isn’t sticky.
