Egg in a Cloud

Step 1
Preheat the oven to 220ºC. Cut the bacon into small pieces. In a non-stick pan, add the bacon and cook until crispy. Discard the excess grease and transfer the bacon to the kitchen paper

Step 2
In 2 bowls, separate the egg yolks and egg white

Step 3
Whip the egg white until stiff peak

Step 4
Gently fold in the cheese, chives and bacon bites in the egg white

Step 5
Scoop into 4 separate mounds on the parchment paper and make a deep well in the center

Step 6
Bake the egg white well for 3 minutes, remove from the oven and add each yolk into the egg white well

Step 7
Season with salt and black pepper and bake it again for another 2-3 minutes until golden brown. Ready to serve.
